Six-Week Bran Muffin Mix

This recipe rocks my socks.
So, of course, I had to share the love.

On my mission, an awesome companion would whip this stuff up.  And just about every morning, all we had to do was pop in a muffin tin with 4 cups full of the stuff....go shower and get ready...then voila! 20 min later we had a couple warm bran muffins each, fresh out of the oven and ready to eat for brekky.

And that is the joy of the recipe. The batter stores for up to six weeks in an ice cream bucket in the fridge. SOoo you can bake however many you want, whenever you want over the course of those six, muffin-filled weeks.

The recipe makes a lot of batter...up to 5 1/2 dozen muffins' worth.

Oh yeah, and this particular version of the recipe is from
"The Essential Mormon Cookbook: Green Jell-o, funeral potatoes, and other secret combinations" (ha!)
by Julie Badger Jensen.

Enjoy!
